Elephant garlic is not a 'true' garlic but is closely related to a leek. It is very hardy and produces impressive pink/purple flower stalks that can be up to 2 m high in summer. The bulbs that weigh up to 500g, form under the soil, reaching 10 cm in diameter and consisting of 5 or 6 large cloves with small bulblets forming around the main bulb. Plants that do not flower in the first season often form one large, round symmetrical clove known as a round. Plants grown from rounds, or from very large cloves, usually produce a large bulb with several cloves and a flower stalk in the first year, whereas plants from small bulblets may take 2 years.  Elephant garlic does best in rich, deeply cultivated, well-drained soil and likes full sun. Plant with tip of bulb about 5 cm beneath soil. It is a useful home garden vegetable especially in warmer, more humid climates. The flavour is mild and can be used fresh in salads or used in cooking.
